The cocido of always
Since 1870, Taberna La Bola has kept one of Madrid's best-loved recipes: cocido madrileño, slow-cooked in an individual clay pot over oak charcoal.
Four generations of the same family have kept the method, the flavour and that red façade that is now part of old Madrid, just steps from the Royal Palace.
Here the cocido is served in two courses: first the broth and then the vegetables, chickpeas and meats. A ritual to enjoy without rushing.
